Tropical Mango Smoothie

With the mid-summer hot spell this week, we’ve been a happy but thirsty bunch.  We’re perpetually gathering jugs of water and cold drinks for the kids’ sports events and outings.   We’re loading up on cold snacks made from cold yogurt and fruit, homemade ice cream, and cool coconut milk smoothies.

We may end up at Target on the hottest of days, where I feel a spontaneous urge to buy an ICEE for the kids, probably because my mom used to buy it for me.  So we saunter around the store with bright blue and red smiles 🙂   But when we’re home, it’s a blast to take our blender for a spin into smoothie land.  This Tropical Mango Smoothie is a favorite for us this summer.

This superbly refreshing mango smoothie is made up of just five ingredients.  Five simple and natural ingredients that we feel great about, as we sip away.  It’s a brilliant way to get kids and grownups alike to take in plenty of delicious mangoes without having to navigate the stringy fruit directly.  We still do love our fresh mangoes au natural, but an ice cold mango smoothie on a hot day is… simply divine.

This Tropical Mango Smoothie is bursting with the sweetness of ripe mangoes.  A little coconut milk gives it a deliciously tropical flair.  Greek yogurt lends protein and wholesome nutrition, while adding a bit of creaminess to the texture.  Then, Agave nectar for just the right amount of sweetness.

Tropical Mango Smoothie

This mango smoothie is a refreshing and fun way to eat your mangoes!
Prep Time: 5 minutes
Total Time: 5 minutes
Servings: 2 large or 4 small servings

Ingredients  

  • 2 large very ripe mangoes, peeled and pitted
  • ¼ cup coconut milk, unsweetened
  • 1 cup vanilla or honey Greek yogurt
  • 4 TB Agave nectar
  • 1 cup crushed ice

Instructions

  • Combine all ingredients in blender. Blend until desired consistency or smoothness is reached. Serve immediately.

    In summer, we usually make a simple mango milkshake with mangoes, milk and ice cream- this sounds like an amazing alternative! I love the addition of coconut- it would go so well with the mangoes!
