THE Easiest Overnight French Toast Casserole Recipe and this recipe for How to Make Cold Brew Coffee both came trotting into my life recently and…boom.

Game. Changed. 

We’ve got both the Eats and the Bevs covered with this magnificent duo. Morning routine perfection pretty much guaranteed.

Since I already  have a fierce arsenal of glorious french toast casseroles, I wasn’t looking for any new breakthrough.I might have even willfully defied trying a new french toast recipe.

But then my friend brought over this amazing Overnight French Toast Casserole for a brunch party. Everyone who bit was instantly smitten (raising my hand.) Of course I absolutely needed the recipe so I could eat this deliciousness whenever I wanted. I adapted the original recipe to make it ridiculously easy, because easy is how I roll when it comes to breakfast.

Make-ahead french toast = extra sleep

I am not a morning person. Those six words basically sum me up for the first 2 hours I’m awake. I was born a night owl, to my parents’ chagrin, and prefer my mornings to be as seamless as possible. My family knows I’ll probably never wake up at 4am to bake fresh bread.

That’s why make-ahead breakfasts are my absolute best friend, especially on weekend mornings when the rest of the family wakes up hungry and ready to eat.

If you’re anything like me, you immediately embrace all things that contribute to you nabbing some extra zzz’s in the morning. This overnight French toast does just that. Assemble all ingredients in the pan the night before, cover and chill, and bake in the morning while you get ready for the day. If your oven has a preset option, you can set it to preheat the night before so there’s minimal wait time.

Ingredients  

Instructions

  • Butter a 9x13 baking dish; arrange bread cubes evenly in the dish. Set aside.
  • In a large bowl, add all remaining ingredients (except optional topping.) Beat until fully incorporated and no clumps of brown sugar remain. Evenly and slowly pour liquid mixture over the bread cubes, gently tossing to ensure that all bread is coated with egg mixture. Bread cubes should be mostly soaked. Cover with foil and chill overnight.
  • Remove casserole from fridge, uncover, and let it rest at room temp while you preheat oven to 350F (rack on lower middle position.) Sprinkle top with Cinnamon Sugar Topping, if using.
  • Bake uncovered for 45-55 minutes, or until French toast is quite pufffy and golden brown. Let casserole rest at least 5 min before cutting and serving. Serve with pure maple syrup and fresh berries, if desired.
