  • Milk: We typically use whole milk for the creamiest texture, but you can also use non-dairy milk alternatives that are creamy enough – oat milk tends to be a good alternative.
  • Toppings: We love a simple dusting of powdered sugar on top, but feel free to serve this French toast casserole with Salted Caramel Sauce or Fresh Fruit Salsa. For a treat, dollop Stabilized Whipped Cream on top.

Step-By-Step Recipe Instructions

  1. Combine eggs, milk, vanilla extract, almond extract, and salt until fully incorporated.
  2. Combine melted butter with brown sugar. Use rubber spatula to evenly press mixture into bottom of a greased 9×13 pan, spreading mixture evenly.
  1. Lay a single layer of bread in pan. Brush 1 cup of egg mixture evenly over every slice of bread, taking care to saturate edges – do not hastily pour egg mixture or all of it will end up at the bottom.

How to avoid Sogginess

  • Use pastry brush or even the back of a spoon to slowly brush on 1 cup of the egg mixture to first layer of bread slices.
  • Take your time. It’s worth a few extra seconds to ensure an even coating and thorough bread soaking, so you don’t end up with any risk of sogginess at the bottom. If you pour the egg mixture too quickly over the bread slices, it won’t soak into the bread; it’ll just slide right into the bottom of your pan.
  • Be sure to get lots of wonderful egg mixture into the edges of each bread slice. It will make a difference.
  • Yes, you can just hand-dip each slice of bread into the egg mixture if you prefer; however, I find that’s actually messier and trickier than simply using my pastry brush.

  • Use hand whisk to combine eggs, milk, vanilla extract, almond extract, and salt until fully incorporated. Mixture should be about 2 3/4 cup total. Set aside.
  • Put butter in a microwave safe bowl and microwave in 20 second increments, stirring in between, until melted. Add 1 cup brown sugar and stir until well incorporated. Use rubber spatula to evenly press mixture into bottom of a greased 9×13 pan, spreading mixture evenly.
  • Lay a single layer of Texas Toast in pan (about 6 whole slices), cutting additional pieces to fill pan bottom, if needed. Very gradually and slowly brush 1 cup of egg mixture evenly over every slice of bread, taking care to saturate edges – do not hastily pour egg mixture or all of it will end up at the bottom.
  • Sprinkle evenly with most of the brown sugar/cinnamon mixture, reserving about 2 tsp of the mixture for topping. Repeat with second layer, using another 6 slices or so of bread. Slowly brush remaining egg mixture over that layer, again paying special attention to the edges. Ensure all slices are well saturated. End with sprinkling of remaining cinnamon sugar mixture.
  • Cover tightly and chill overnight in fridge, or at least long enough for custard to thoroughly soak bread.
  • Preheat oven to 350F, with rack on lower middle position. Let casserole rest at room temp while oven preheats. Bake for 40-45 minutes, covered for the first 30 minutes, and uncovered after that.
    Be sure to scrape up all the bottom sticky goodness when serving. Serve with a dusting of powdered sugar and maple syrup.

    I’ve made many French Toast Casseroles so expectations were high when I brought this to a baby shower. It was delicious and some family members said it was the best I’ve ever made. I made two 13X9 pans of this so it was a bit labor intensive to brush on the egg mixture on two big casseroles. If I make just one the next time I imagine it will be much easier!
    I sprinkled confectionary sugar over casserole once it was out of the oven. Then I served each piece with a dollop of homemade whipped cream and mixed berries.

    Just too it out of the oven, Delicious! Used TJ French brioche.
    One question though, the sugar on the bottom did not melt. Its just a layer of sugar. What did I do wrong?

      Use fresh brown sugar and mix it thoroughly with the melted butter, as in image/instructions. That should ensure that the bottom is beautifully caramelized 🙂 Glad you all enjoyed it!

    I’m not normally a commenter on recipes, even when I like them, but this casserole deserves one. I more than doubled the recipe to make two large casseroles for a shower/brunch I had at my home. Almost every person at the shower said it was the best French toast they’ve ever had. It truly tasted delicious. The the men came in after the shower and ate our leftovers and my son commented how great it was, and by that time it was already cold, and he didn’t even heat it up! I have to admit, I don’t care for almond extract but its a needed ingredient to give this casserole that “exceptional” taste! I baked both of them together in my oven at 350° on two separate racks for about seventy minutes and they came out perfect! The only deviation I made was that I used thick sliced Italian bread instead of Texas toast. I can’t imagine it tasting any better. Thank you so much for this great recipe…..I will be sharing it with numerous people.
