30-Minute Tuscan Tortellini with Sausage and Spinach
Tomato Pasta Sauce
In a very large skillet heat olive oil until hot. Add onion and garlic - stir until aromatic and tender.
Push onion mixture to one side & add sausage to center of the pan. Cook and break up sausage; once it’s half-cooked, stir together with the onion. Then, cook until browned.
Add tomato sauce, diced tomatoes, broth, and half/half. Stir and bring to a simmer. Add tortellini. Stir & cover. Simmer for 7-8 minutes.
Time to Serve
Remove from heat. Gently stir in spinach and just until wilted. Add freshly ground black pepper to taste. Serve immediately with freshly shredded Parmesan cheese.
Go meatless & replace with sweet bell peppers, carrots or zucchini.
Try chopped kale leaves instead of spinach
If you use fresh tortellini instead of frozen lessen cook time so tortellini does not overcook.
