Rehydrate dried Shiitake mushrooms by soaking in warm water for about 1 hour. Drain well and chop. Set aside.Drain soaked rice and rinse with cold water. Set aside.
Stir fry ginger for a minute. Add sausage & mushrooms, stir fry for another minute. Add in rice wine, soy sauce, oyster sauce, sesame oil, white pepper & rice. Stir to coat. Add broth, stir and bring to a boil.
Once it reaches a boil, reduce to simmer. Cover and cook 45 min. Turn heat off and let it sit for at least 10 min, covered. Do not peak!Carefully stir from bottom to top. Cover and let sit 10 min.
