This One Pot Gnocchi with Spinach and Chicken is a meal in one!  This comforting gnocchi recipe turns out tender and flavorful. The creamy sauce is irresistible.


- Butter -Flour -Milk  -Broth -Nutmeg  -Onion Powder  -Garlic Powder -Baby Bella Mushrooms -Rotisserie Chicken  -Potato Gnocchi  -Baby Spinach  -Parmesan 

Create a roux. Whisk in milk and chicken broth. Simmer until thickened.  Whisk in nutmeg, onion powder, and garlic.

Add shredded chicken, mushrooms, uncooked gnocchi, and spinach to the mixture. Stir gently until well coated through.

Cover with parmesan and bake at 425F for 15-20 minutes.

If desired, broil 2-3 minutes to further brown the top.
