Vegetarian Chili

The Best

This is hands down the best vegetarian (or vegan) chili we’ve ever devoured, whether by slow-cooker or stovetop. This vegetarian chili can be made in your Crock Pot or simply on the stovetop, your choice. You won’t miss the meat with these big, bold flavors.

Onion | Garlic | Sugar | Chili Powder Cumin | Oregano | Cinnamon  Coriander | Tomato Paste | Broth Bell Peppers | Roasted Tomatoes Black Beans | White Beans | Corn Garbanzo Beans | Vegetable Burgers

Ingredients

Stovetop Method

Heat olive oil. Add onion & garlic, stir until fragrant. Add sugar, chili powder, cumin, cinnamon, oregano and coriander. Stir. Add tomato paste and stir again.

Continue Cooking

Add bell peppers, fire-roasted tomatoes, salt, pepper, and broth. Scrape the pot while stirring. Bring to a simmer and add beans, corn, and vegetable crumbles, stirring to combine well.

Bring back to a simmer, cook, another 20 minutes. Remove from heat. If desired, add salt and black pepper. Serve warm with desired garnishes.

Finish the Chili

Add all ingredients into slow cooker. Cover and cook on Low for 6 hours. Keep warm until ready to serve.

Slow Cooker Method

Serve with honey cornbread or sweet corn muffins. ENJOY!
