These Peach Crostini are one of those recipes that feels fancy but comes together fast. Juicy peaches, goat cheese, and a splash of balsamic work beautifully with toasted bread.
Preheat oven to 400F, with rack on middle position. Line large baking sheet with foil and set aside.
In a small bowl, combine honey with balsamic vinegar and mix well. Set aside.
In another small bowl, combine olive oil and garlic powder.
Brush garlic oil mixture over baguette slices, and place slices in a single layer on baking sheet. Bake about 6 minutes, or just until light golden brown. Let cool to room temperature.
Evenly divide cheese over each slice of toast. Place 2 peach slices on top of each toast.
Top with basil and drizzle with honey/vinegar mixture.

Use ripe but firm peaches so they are easy to slice and hold their shape. There's no need to peel them if you wash them well.
Choose a cheese that matches your preference. Goat cheese adds a creamy tang, while gorgonzola brings bold flavor. Feta, ricotta, mozzarella, or even parmesan also work well.
Combine the honey and balsamic vinegar ahead of time to let the flavors blend. A thick, good-quality balsamic gives the best drizzle consistency and flavor balance.
Toast the baguette slices until they are golden and crisp but not too hard. Let them cool before adding toppings so the bread stays crisp. You can also grill the bread for added flavor.
Wait to assemble the crostini until just before serving to prevent the bread from softening. For gatherings, offer a build-your-own setup so guests can add toppings as they like.
