Ingredients
1 ½lbssmall red potatoes, cleaned and cut into 1-inch pieces
kosher salt and freshly ground black pepper to taste
Optional: Dried parsley or chives for garnish
Instructions
Preheat oven to 400F, with rack on middle position. Lightly grease large baking sheet with rims.
In a large bowl, toss potatoes with oil and ranch seasoning until well coated.
Spread potatoes evenly on greased pan in a single layer; don't overcrowd. Bake 25-30 min or until potatoes are just browed and tender.
While potatoes are still hot, season with additional kosher salt and black pepper to taste. If desired, garnish with dried herbs and serve immediately.
