Creamy Caesar Salad

Creamy Caesar Salad Recipe

Hope you all had a safe and enjoyable holiday.

We spent heaps of time with family/friends, inhaling Caramel Corn, watching every Pixar movie, competing obsessively on Wii Sonic, and hitting the fresh powder that spilled down from the skies.

That was then. This is now. Now is when the blustering winds have unleashed all their fury and we’re way sub-zero.  Lock the doors and stay in.

At least it’s back to school for The Littles tomorrow.  The time flies. It’s surreal that this post is the very first one published in 2015.

If any dish deserves the spotlight, it’s positively this Creamy Caesar Salad…the best everrr…

Cheesy, Garlicky, and full of flavor

I’ve been friends with Caesar salad since high school, when I took my first bite of a really good homemade version.

We all know the dressing is king.  It is the deal maker vs. breaker.  Outstanding Caesar dressing has to be creamy, savory, garlicky, full of parmesan, and infused with anchovies.

Don’t worry, you don’t have to go face to face with anchovy chunks.  We use anchovy paste, which has wonderful flavor.  Plus, if you use the tubed kind, it measures easily and keeps fresh longer.

It’s better than anything store bought

This dressing… you just can’t buy stuff this good anywhere.

This Creamy Caesar Salad dressing is soooo tasty, it’s highly probably someone might pile a spoonful of dressing onto a small leaf of lettuce and call it Salad. And repeat.

This is a wildly awesome dressing; it is certain to ruin all other Caesar dressings for you, once you taste this. So be fairly warned that you’ll never be able to go back to bottled Caesar dressing after this.

Our favorite (and highly recommended) way to enjoy this Creamy Caesar Salad is to top it generously with freshly shaved parm and lots of homemade croutons.

This is *the* best ceasar dressing ever. It beats every store bought brand out there & trust me I have tried just about every brand in the search for the best.
I keep mine in a mason jar and it lasts a good amount of weeks in the fridge.

      • Amy Dong

Yes!! That makes me super happy to hear 🙂

Perfect. No salt needed, and I have a salt tooth. It got enough from the anchovy… and I might have gone a little heavy handed on that – YUM

I am so happy I found your recipe. First time to make homemade caesar dressing. It was delicious! Question? Once the dressing has been mixed how long will it be good in fridge. I made the 1x recipe and only needed half of the dressing.

      • chewoutloud

Yay! I’m always super happy when people find out how easy and awesome homemade Caesar dressing really is. You can keep it in the fridge 2-3 weeks, airtight. 🙂

I too used less mayo and a little yogurt in this dressing. It’s a great salad dressing and one I can make often since it has no raw egg.

      • chewoutloud

So happy you liked this recipe, Nancy!! Yay 🙂 🙂

    • Nicole M Villelli

Making this tonight and I’m super excited with all the great reviews! But in only have a 2oz tin of anchovy filets. How much should I use?

      • chewoutloud

Nicole, you can just add according to taste, as the strength of flavor will probably be a bit different. Hope you loved this dressing. Thanks for coming over 🙂

    • Brittany

I used half mayo, half plain Greek yogurt in lieu of mayo, no anchovy paste and tons of black peppercorn and it was great!! More like a creamy garlic Parmesan peppercorn dressing. I will keep this one on file.. thanks!

      • chewoutloud

So glad you liked this, Brittany! Nothing better than homemade dressing 🙂

    • Beth

Wow! Just what I was looking for…just curious has anyone ever tried using roasted garlic as well as fresh? Just curious how that would turn out.

      • chewoutloud

Suzanne, using roasted garlic would be great as well! 🙂

    • Sara

My search for the best creamy caesar dressing ends here! Thank you so much for a delicious recipe. Everyone in my family loved it.

Is your 6-8 yield in cups?

      • chewoutloud

It refers to amount of people the recipe should feed. The number of people it can feed also depends on whether the dish is used as a side, main, or potluck. Thanks for being here, Jocelynn. Enjoy!

    • Mary

This is so good! Perfect balance of flavors. I used homemade mayo. So easy. I will be making this regularly this summer!

Yay, Mary, so glad you liked it!! Homemade mayo sounds fabulous, too 🙂
