  • This is the most moist and delicious healthy pumpkin bread you'll bake and eat. This pumpkin bread recipe is made with pure honey, plenty of real pumpkin, and whole grain. You've got to try it to believe how good it is. ✨❤✨ 💾 Save this post: Ingredients List 👇 1 cup pure pumpkin puree ½ cup pure honey ½ cup extra virgin olive oil ¼ cup apple cider 2 tsp pure vanilla extract 2 large eggs, lightly beaten 1 ¾ white whole wheat flour, do not pack down or tap measuring cup* 1 tsp baking soda 1 tsp ground cinnamon ½ tsp ground ginger ¼ tsp ground nutmeg ¼ tsp ground cloves ½ tsp table salt Optional Topping: 1 TB coarse turbinado raw cane sugar, plus extra Instructions Preheat oven to 325F with rack on lower middle position. Grease a nonstick 9x5 loaf pan and set aside. In a large bowl, mix together the pumpkin honey, oil, cider, vanilla, and eggs until fully incorporated. In a separate bowl, use hand whisk to fully combine the flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt. Use rubber spatula to gently fold flour mixture into the pumpkin mixture. Batter should be rather thin, so you only need to fold a few times just until no dry flour streaks remain. Use rubber spatula to transfer mixture into prepared loaf pan. Even out the top so that corners are filled. If desired, sprinkle top evenly with turbinado sugar and bake 45-50 minutes or just until toothpick inserted into center comes out with a few tender crumbs attached. Do not wait until toothpick is fully dry/clean, as it's often overdone by then. If desired, sprinkle extra turbinado sugar over top of freshly baked pumpkin bread and let cool completely in pan at room temp. Remove giblets from chicken and towel dry entire chicken well, both inside and out – this step is important to ensure chicken doesn’t turn out “watery.” Using your fingers, gently pry the skin away from the chicken all around, so you’ll be able to season chicken underneath skin. Combine Spices (can be done in advance:) In a small bowl, combine all the spices, from salt to black pepper. Mix well. Use your hands to evenly spread two-thirds of the spice mixture onto chicken, underneath the skin. Be sure to include all areas of chicken (legs, back, thighs, etc.) Use remaining spice mixture to spread on top of skin. Place seasoned chicken on top of chopped onion in slow cooker. Cover and keep chilled overnight. Cook: When ready to cook, turn slow cooker on Low for 5-6 hours only. The creamy sauce is irresistible. ❤❤❤ 💾 Save this post: Ingredients List 👇 2 TB salted butter 2 TB all purpose flour 1 ½ cups whole milk 1 cup regular chicken broth ½ tsp nutmeg 1 tsp onion powder 4 cloves garlic, minced 1 package, 8 oz thinly sliced baby bella mushrooms 1 lb shredded rotisserie chicken 1 17.5 oz package potato gnocchi (usually found in the dry pasta aisle; not frozen) 2 cups baby spinach leaves ½ cup freshly grated parmesan cheese kosher salt and freshly ground black pepper Instructions Preheat oven to 425F with rack on upper middle position. In a deep/large and oven-proof skillet, melt the butter over medium heat. Add flour and whisk constantly for 3 minutes until a smooth roux is formed. Whisk in milk and chicken broth until incorporated. Simmer and whisk constantly until slightly thickened, 5 minutes. Whisk in nutmeg, onion powder, garlic, and kosher salt/ground pepper to taste. Add shredded chicken, mushrooms, uncooked gnocchi, and spinach to the mixture. Stir gently until well coated through, 30 seconds. Sprinkle parmesan evenly over the top and bake in oven about 15-20 minutes or until sauce is bubbly at around the edges and gnocchi is tender. If desired, broil 2-3 minutes to further brown the top. Serve with a loaf of French or Italian bread to eat up any leftover sauce. ❤️❤️❤️ 💾 Save this post: Ingredients List 👇 2 TB olive oil 1 onion, chopped 4 garlic cloves, minced 1 lb Italian sausage, bulk, no casings 1 16 oz package potato gnocchi (from refrigerated or pasta aisle) 1 14.5 oz can Italian flavored diced tomatoes with juices (do not drain) ¼ cup low sodium chicken broth 4 cups fresh baby spinach leaves ¼ tsp freshly ground black pepper ½ cup shredded mozzarella cheese ½ cup freshly shredded Parmesan cheese Instructions In a large nonstick skillet, add oil and heat over medium high until hot. Add onion and garlic and stir/cook until fragrant, 30 seconds. Add sausage; stir and break it up into pieces, until nicely browned. Don't drain. Add uncooked gnocchi. Stir 1 min, gently breaking up any clumps. Stir in tomatoes with juices and chicken broth. Cover and cook on medium heat, 5 min, or just until gnocchi is fluffy and cooked through. Turn off heat. Add spinach and pepper. Stir until spinach leaves are wilted. Sprinkle with cheeses and cover for 3-5 minutes or until cheese is melty.
