I had the lovely realization this morning that my little guys aren’t returning back to school on Monday as I’d thought. There’s an extra day off to recoup before we get back to our regularly scheduled routine.
Very good thing I discovered that little detail today and not Monday morning.
[Because I would totally be that mom who accidentally showed up to an empty school parking lot.]
Until then, we’re planning on a New Year’s weekend of hiking in the snow (I’m so Minnesotan now.) Plus yummy make-ahead cocktails for NYE and pancakes the next morning.
Introducing Pomegranate Apple Sangria…
This delicious cocktail sangria is easily made ahead 12-24 hours ahead of time, chilled in fridge, and served when you’re ready. It’s festive, yummy, and perfect for rounding out the holidays.
My favorite cocktails reside in the the make-ahead category, since I always prefer to mingle rather than play mixologist. I’m not great under pressure; not my preference to have people standing around watching while I spill red juice all over my shirt.

Make-ahead is very, very good. The extra chill time gives this Pomegranate Apple Sangria time to do some flavor melding, which results in a delicious drink or two.

Pomegranate Apple Sangria
Ingredients
- 1 cup pomegranate juice
- 1 cup apple cider
- 1 bottle red wine
- ½ cup triple sec
- ½ cup port, sweet red dessert wine
- ½ cup pomegranate seeds
- 1 apple, cubed
- 2 cups ginger ale
Instructions
- In a large pitcher or punch powl, combine all ingredients except for the ginger ale. Stir to combine well. Cover and let chill in fridge 12-24 hours. When ready, gently stir in the ginger ale just before serving.
