  • Ground Meat: If you’re not a fan of ground beef, you can easily swap it out for ground turkey or even ground chicken. Note that 80-85% lean ground meat will produce juicier results than 90-95% lean ground.
  • Gluten-Free: If you’re gluten intolerant, substitute the seasoned bread crumbs with gluten-free breadcrumbs or crushed gluten-free crackers.
  • Spices: Feel free to experiment with the seasonings in your patties. Try smoked paprika, cayenne pepper, or even a dash of hot sauce.
  • Mushrooms: We love adding mushrooms to our gravy here, but feel free to omit the mushrooms if someone you’re feeding has “mushroom allergies.”

Step-By-Step Recipe Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onions for 2-3 minutes, then add garlic and sauté for 1 minute. Set aside half of this mixture.
  2. Combine half of mixture with beef, breadcrumbs, egg, mustard, ketchup, salt, Worcestershire sauce, and pepper. Shape into patties and cook 3 minutes per side or until browned/cooked.
  1. Melt butter and whisk in flour to make a thick roux. Zdd broth, mustard, Worcestershire, and sugar, stirring constantly. Boil for 5 minutes until it thickens.
  2. Add the reserved onion/garlic mixture, mushrooms, salt, and pepper to the gravy. Pour over the beef patties and heat until warm.

What is Salisbury steak?

What’s the difference between Salisbury steak and a hamburger?

Salisbury steak includes binders (breadcrumbs, eggs) and aromatics, along with seasonings. Typically, a hamburger is seasoned with salt, pepper, and not too much else before tossing on the grill. Additionally, Salisbury steak gravy is what makes it entirely distinctive.

Can I use a different type of ground meat for the patties?

Yes, you can. While we used lean ground beef for this recipe, you can also use ground turkey, chicken, or pork. Just keep in mind that the cooking time may vary depending on the type of meat you choose.

How do I know when the beef patties are fully cooked?

The beef patties are fully cooked when they are nicely brown on both sides and no longer pink in the middle. You can also use a meat thermometer to check that the internal temperature has reached 160°F.

  • In a heavy large skillet, heat 2 TB olive oil over medium high heat. Add onions and stir 2-3 minutes. Add garlic and stir 1 minute. Reserve half of this mixture for later. 
  • Add the other half of the garlic/onion mixture to a large bowl with ground beef. Add breadcrumbs, beaten egg, mustard, ketchup, salt, Worcestershire sauce, and pepper to the bowl. Stir to combine mixture well.
  • Form beef mixture into 7 even sized patties, about 1/2" thick each.
  • In heavy large skillet, add another TB of oil and heat over medium high heat. Cook beef patties 3 minutes per side or until nicely browned on both sides and fully cooked through — do this in 2 batches, adding olive oil as needed

Make Gravy

  • While patties are cooking, make the gravy: In a separate saucepan, add the butter over medium high heat. Add flour to melted butter and whisk until mixture is a thick roux.
  • Add broth, mustard, Worcestershire, and sugar to the saucepan; constantly whisk until mixture is smooth. Bring to a boil and let sauce boil about 5 minutes or until thickened.
  • Add reserved onion/garlic mixture from earlier, plus mushrooms, stirring to combine well. Add salt and pepper to taste, if needed. Pour finished gravy over beef patties in original skillet and heat just to warm through.

Notes

  • When making the beef patties, make sure to handle the meat gently and do not overwork it. This will help to keep the patties tender and juicy.
  • If gravy is too thick, add a bit more beef broth; if it’s too thin, let it simmer a bit longer until it reaches your desired consistency.
