Olive Oil | Onion | Garlic | Celery Diced Tomatoes | Tomato Paste Carrots | Green Beans | Zucchini Broth | Red Wine | Beans | Seasonings Pasta | Parmesan Cheese
In a large heavy pot or Dutch oven, heat the olive oil over medium heat. When the oil is hot, add the onion and garlic. Cook until translucent, stirring frequently.
Add the broth, tomatoes with juices, wine, tomato paste, celery & carrots. Increase the heat, and bring to a boil for 15 minutes.
Add green beans, kidney beans, white beans, zucchini, herbs & pasta. Bring back to a boil, and cook until the pasta is done.
Season with salt and pepper to taste. Garnish with freshly grated Parmesan, if desired. Serve with bread or crackers.
