Miso Glazed Salmon – Healthy and Easy

Whether you traveled out of town or stayed on familiar grounds, we’re hoping it was a restful 3-day weekend for you and your loves. We realize some of you worked through it, while others enjoyed a 4-day vacay…so, at the very least, hopefully there was a highly tasty juicy burger or creamy potato salad involved in there somewhere? Maybe even a refreshing lime mojito snuck in somehow? ✨
For us, we worked-played through the holiday weekend. I was hit with a much-belated spring cleaning fever and decided to do the annual hand-me-down/donation shuffle with all the boys’ closet things. Some of you know this is not a dazzling task. However. Now everyone has closets housing clothes that actually fit. This ideal situation will last approx. 6 months, but I’m staying in the moment 😉
Said cleaning bug also resulted in pulling up enough weeds to fill 4 bags, followed by major re-mulching. Plus cleaning out the entire garage. {Told y’all I was very behind this year.}
We did work in some gorgeous hiking, a profesh soccer game, lunch with old friends, and a visit to our favorite senior home.
Plus. The best-ever Cherry Mojitos did happen. And plenty of out-of-the-box burgers. Which is why today we’re back to a healthy favorite: Miso Glazed Salmon…
After a 3-day weekend of work-play-work that tacked on too many indulgent eats, it’s time for the good stuff our bodies crave.
Luckily, all the taste buds happily oblige and all the tummies are thrilled with this Miso Glazed Salmon. It happens to be based on an issue of Cook’s Illustrated I’d earmarked long ago, so you know it won’t disappoint.
This umami-delish salmon dish is tender, bursting with flavors, and so easy. You just have to say yes to letting the marinade rest overnight to pack flavor into the salmon.
You only need a handful of ingredients and about 8 minutes of broiling time. Simple and mouthwatering.
Here’s to always going back to Healthy after an indulgent day (or three.)

Miso Glazed Salmon - Healthy and Easy
Ingredients
- 4 6- to 8-ounce salmon fillets, approx. 1-inch thickness
- ½ cup white miso paste
- 3 TB granulated sugar
- 3 tablespoons Japanese rice wine, Sake
- 3 tablespoons Japanese sweet rice wine, Mirin
- ¼ tsp freshly cracked black pepper
- Garnishes: toasted sesame seeds, thinly sliced green onions
Instructions
- Thoroughly towel-dry salmon fillets to remove excess moisture. Set aside.
- Using a hand-whisk, gently mix together the miso, sugar, Sake, Mirin, and pepper until smooth and fully incorporated. Dip each salmon fillet into miso mixture to evenly coat both sides of each piece of fish. Place salmon fillets in a single layer in 9x13 or other large pan; gently spread remaining miso mixture evenly on top of each fillet. Cover with plastic wrap and chill overnight, up to 24 hours.
- Preheat broiler on high, with rack 8 inches from heat source. Set a wire rack on a large baking sheet. Line wire rack with foil. Gently remove excess miso mixture from fillets (do not rinse) and place fish on foil-lined wire rack. Do not overcrowd the fish (should be at least 1 inch space in between each piece.)
- Broil salmon until browned on top/sides and centers feel somewhat firm upon lightly pressing down with a spatula (roughly 8 minutes, depending on thickness and temp of fish to begin with.) If tops/side brown too quickly, loosely cover with foil and cook until fish is just done (take care not to over-cook.) Garnish as desired. Serve while warm, with white or brown rice.
Notes
We used white miso paste for a milder flavor and appearance, but any color miso paste can be substituted.
Use salmon fillets of even thickness, for even cooking results.
Leftover salmon is delicious reheated, or served cold with a salad.
