This dish has a long history in my family, as I’ve been making it since my adult children were babies. We all love the crispy tater tots on top, cheesy goodness, and crumbled bacon. I love how easy it is to completely prep ahead the night before. What to love:

  • Bacon: 4 slices bacon, cooked and crumbled. I really like thick cut, applewood style bacon here, as it gets nice and crispy.
  • Sausage: ground breakfast sausage, no casings; my favorite kind are the Italian seasoned, but feel free to use your preferred ground sausage.
  • Cheese: Sharp cheddar is the best. It imparts such a big cheesy flavor and melds beautifully in this casserole recipe.
  • Milk: whole milk is preferred for a creamier texture, but you can use low-fat if you prefer.
  • Eggs: 3 large eggs is just the right amount to allow the tater tots to crisp up nicely during baking. Too many eggs would prevent the tots from crisping up.
  • Tater Tots: your favorite brand will work fine, as long as it’s unseasoned.
  • Seasonings: freshly ground pepper from fresh peppercorns, onion powder, salt, and freshly chopped parsley impart delicious flavors.

  • Swap the Protein: Swap ground sausage for turkey sausage, ground beef, or diced ham. For a vegetarian version, use plant-based sausage crumbles or simply load up on sautéed veggies.
  • Vegetable Boost: Add diced bell peppers, mushrooms, spinach, or onions. Sauté them briefly beforehand to release excess moisture so the casserole doesn’t get soggy.

  • Assemble Completely the Night Before: Layer the sausage, cheese, egg mixture, and tater tots in your baking dish. Cover tightly with foil or plastic wrap and refrigerate overnight.
  • Make Ahead and Freeze: Assemble entire casserole, but leave out the frozen tater tots. Cover tightly and freeze for up to 1 month. Thaw in fridge overnight. Add frozen tater tots just before baking. If very cold, it may need a bit more bake time.
